Resumo(s): | Tendo em conta o objetivo último desta dissertação, nomeadamente otimizar o processo de vidragem
numa empresa de pescado congelado, surgiu a necessidade de analisar algumas espécies para
entender de que forma é que variáveis como a temperatura, área da superfície, tamanho e forma do
produto, poderiam influenciar a sua percentagem de vidragem e consequentemente a sua vida útil,
uma vez que, a vidragem atua como uma barreira física que protege a qualidade do pescado
congelado.
O camarão tigre e o red-fish chegam à fábrica congelados e em caixas, havendo a necessidade de os
deixar fora da câmara frigorifica 2 e 16 horas, respetivamente, para ser facilitado o desmanche. Aferiu se que, no caso do camarão, as 2 horas fora da câmara antes da vidragem não afetam
significativamente, nem as temperaturas, nem a vidragem do produto. Já no caso do red-fish, as 16
horas fora da câmara fazem aumentar consideravelmente a temperatura do peixe, prejudicando a sua
vidragem. Analisando ainda a influência da temperatura do pescado na vidragem, constatou-se que o
facto de por vezes ser necessário cortar e vidrar tintureira no mesmo dia, sem que esta fique de um
dia para o outro dentro da câmara (depois de cortar e antes de vidrar), não afeta negativamente a sua
vidragem.
Averiguou-se também que diferentes tamanhos de tintureira e de atum, podem realmente influenciar
de forma significativa as percentagens de vidragem, no entanto, não é muito comum que as diferenças
de tamanho entre espécies sejam muito acentuadas. Em nove amostras analisadas, apenas duas
apresentaram valores discrepantes relativamente ao expectável.
Fez-se uma última análise para entender se as peças de pescada-chouriço que saem “coladas” dos
túneis de azoto da empresa, perdem muita vidragem ao serem separadas com a ajuda de uma faca,
e concluiu-se que com esse processo, é retirada, em média, a cada uma das peças 19,8 % da sua
vidragem total.
Idealmente, tanto nas análises que relacionaram a temperatura do produto com a sua vidragem, como
naquelas que relacionaram o tamanho, forma e área da superfície do produto com a vidragem, seriam
necessários ensaios em triplicado, usando o triplo das amostras, para se poder fazer uma análise
estatística mais robusta. Bearing in mind the ultimate goal of this thesis, namely optimizing the glazing process in a frozen seafood company, it is clear the need to analyse some species to understand how variables such as temperature, surface area, size and shape of the product, can influence its glaze percentage and consequently, its shelf life, since the glazing acts as a physical barrier that protects the quality of frozen seafood. The tiger shrimp and red-fish arrive at the factory, frozen and in boxes, and there is a need to leave them out of the cold storage chamber for 2 and 16 hours, respectively, in order to facilitate its unstuck. It was found that, in the case of shrimp, the 2 hours outside the chamber before glazing do not significantly affect neither the temperatures nor the glazing of the product. In the case of red-fish, the 16 hours outside the chamber increases the temperature of the fish considerably, impairing its glaze. Also, analysing the influence of seafood temperature on glazing, it was found that the fact that it is sometimes necessary to cut and glaze the blue shark on the same day, without it remaining overnight inside the chamber (after cutting and before glazing), does not negatively affect its glaze. It was also found that different sizes of blue shark and tuna, can really significantly influence the glazing percentages, however, it is not very common that the differences in size between species were very accentuated. In nine samples analysed, only two presented outliers compared to what was intended. A final analysis was carried out to understand whether the pieces of chorizo-hake that “stick” to one another, inside the company's nitrogen tunnels lose a lot of glaze when they are separated with the help of a knife, and it was concluded that, with this process, an average of 19,8 % of its total glaze is removed from each piece. Ideally, both in analyses that related the product's temperature to its glaze, as well as in those that related the size, shape and surface area of the product to the glaze, triplicate assays, using triple the samples, would be needed to make a more robust statistical analysis. |
