Resumo(s): | O setor dos restaurantes tem vindo a caracterizar-se por uma elevada taxa de
natalidade, mas por uma taxa de mortalidade superior, o que revela que o número de
empresas desceu entre 2008 até 2015. Nesta dissertação foram estudas as estratégias e
práticas de marketing dos restaurantes portugueses. Por forma a disponibilizar
informação sobre o tipo de marketing praticado neste setor em Portugal, de uma forma
agregada relativamente ao composto de marketing, e tendo em conta que mais de metade
dos problemas relacionados com falências em restaurantes são fruto de problemas de
marketing, o principal objetivo passa por dar a conhecer tais estratégias e práticas aos
atuais restaurantes, e àqueles que pretendem abrir um negócio neste setor, e auxilia-los
na sua gestão. Tentou-se também detetar diferenças destas práticas entre tipo de
restaurante e entre restaurantes com mais de cinco anos de atividade e restaurantes com
menos idade. Posteriormente tentou-se verificar a relação entre a orientação para a
concorrência e a estratégia de formulação dos preços. O método usado foi o inquérito, a
gestores e proprietários dos restaurantes portugueses. A pesquisa visou conhecer as
estratégias de produto, nomeadamente os serviços complementares; estratégias de preço;
os fatores com mais impacto na decisão da localização; os meios de comunicação usados;
os elementos do ambiente físico mais importantes; o empowerment concedido aos
funcionários; e o tipo de orientação para a concorrência. Num total de 243 respostas (9,4%
da população inquirida), os resultados mostram que as estratégias e instrumentos variam
em função do tipo de restaurante, principalmente nas variáveis “produto”, “preço”,
“ambiente físico” e “pessoas”. Quanto ao ciclo de vida organizacional e à orientação para
a concorrência, deste estudo não se pode concluir existir relação entre as variáveis. The restaurant sector has been characterized by a high birth rate, but by a higher mortality rate, which shows that the number of companies dropped between 2008 to 2015. In this dissertation the marketing strategies and practices of portuguese restaurants were studied. Given the lack of information on the type of marketing practiced in this sector in Portugal, in a generalized way, and considering that more than half of the problems related to restaurant bankruptcies are the result of marketing problems, the main objective is to give to know such strategies and practices to the current restaurants, and to those who intend to open a business in this sector, and assist them in its management. It was also tried to detect differences of these practices between type of restaurant and between restaurants with more than five years of activity and restaurants with less age. Subsequently, it was tried to verify the relation between the competition orientation and the strategy of formulation of the prices. The method used was the survey, to managers and owners of portuguese restaurants. The research aimed to know the product strategies, namely complementary services; price strategies; the factors with the most impact on the location decision; the means of communication used; the most important elements of the physical environment; the empowerment granted to employees; and the type of competition orientation. In a total of 243 responses (9.4% of the surveyed population), the results show that the strategies and instruments vary according to the type of restaurant, mainly in the variables "product", "price", "physical environment" and “people”. Regarding the organizational life cycle and the orientation towards competition, it is not possible to conclude that there is a relationship between the variables. |
